This family estate in Kammern farms some of the best-known sites in the Kamptal – Lamm, Gaisberg, Grub, Renner and Heiligenstein. Johannes Hirsch narrowed the estate’s focus radically and early on: the last red wine was harvested in 1999, and since then there has been only Grüner Veltliner and Riesling. In 2002 the estate was one of the first to switch its entire range to screw caps, and in 2006 it began converting to biodynamic viticulture. The wines rarely exceed 12.5% alcohol and are nevertheless built for long ageing; in 2011 Falstaff named Hirsch Winemaker of the Year.
